Lauki ki Sabzee




500 grams




4 Medium

Washed and chopped

Fenugreek Seeds


¼ tea spoon


Turmeric Powder


¼ tea spoon


Red Chili Powder


¼ tea spoon



Garam Masala

¼ tea spoon


Cumin Seeds


1 tea spoon




One pinch


Coriander Powder


2 tea spoons




1 tea spoon




3 table spoons


Green Chilli




Fenugreek Seeds leaves


1 tea spoon

Crushed with the palm of the hands

Hara Dhaniya




  1. Wash and peel the lauki
  2. Using a peeler, skin the lauki
  3. Cut the two edges
  4. Chop the lauki into ½ inch pieces
  5. In a pressure cooker, heat the oil
  6. Add Fenugreek Seeds, Jeera, Hing
  7. Once the seeds start cracking, reduce flame to low
  8. Add the Coriander Powder and green chilli
  9. Add the tomatoes and Turmeric Powder
  10. Mix well
  11. Add the Red Chili Powder
  12. Turn flame to high.
  13. Mix well and let it cook till tomatoes become soft. They will start separating oil.
  14. Add the dry Fenugreek Seeds leaves
  15. Turn flame to low
  16. Add the lauki
  17. Mix well
  18. Add the salt
  19. Mix well
  20. Add one tablespoon of water
  21. Close the lid and give it four whistles
  22. Switch off the gas
  23. Once the gas is released, remove the cover. Using a spatula, press the lauki gently.
  24. Add Garam Masala and mix well
  25. Switch on gas and cook for 2 minutes

Garnish with Hara Dhaniya
