Sprouted Moong Sabzi

This is a healthy semi dry curry made with Moong Sprouts.

 

Moong Dal

2 cups

Sprouted

Oil

 

1 table spoon

 

Ginger

 

1 inch

Finely chopped

Garlic

 

5 to 6

Finely chopped

Onion

 

1 medium

Chopped

Green Chili

Finely chopped

 

Hing

1 pinch

 

Tomato

Chopped. Dice each tomato into 8 piece

Turmeric

 

¼ tea spoon

 
 

Dhaniya Powder

½ tea spoon

 
 

Jeera Powder

½ tea spoon

 

Red Chili Powder

 

¼ tea spoon

 
 

Garam Masala

½ tea spoon

 

Potato

Boiled, peeled and chopped.

Water

 

2 cups

 

Salt

 

½ tea spoon

 
 

Dhaniya Patta

2 table spoon

Finely chopped

 

  1. In a Kadai, heat 1 tablespoon oil
  1. Add the ginger, garlic and sauté
  2. Add the onion, green chili and hing. Sauté will the onion becomes dark pink
  3. Add the tomato
  4. Add the Turmeric powder, Dhaniya powder, Jeera powder, Red Chili powder and Garam Masala. Mix well and cook for 1 minute
  5. Add the potato and Moong sprouts. Mix Well
  6. Add 2 cups of water and Salt. Mix well
  7. Reduce flame to low. Cover the lid and cook for around 2 to 3 minutes.

 

Garnish with Dhaniya Patta and enjoy with Roti or as a side dish
